Cranberry Raisin Bran Muffins....... Made From Raisin Bran Cereal!
So despite my best efforts.... my kiddos don't always eat everything I buy. I am a big believer in trying new things.... especially when it comes to healthy foods. I bought a few boxes of Raisin Bran Crunch a little while back hoping that the kiddos would dig right in and love it, I mean they love raisins, they love pretty much any kind of cereal, so they would love this right? Yeah... wrong. My hopes of replacing a few other boxes of what I call junky cereals that the kiddos love ( you know the ones with marshmallows, chocolate pieces, and tons of sugar? ) with these boxes of raisin bran were a complete bust. Now while the mama loves and eats this cereal.... I am only one person. So I found myself standing in a blank gaze at the row (yes you read right row, as in 5 boxes) thinking to myself.... " Yeah now what?"
Well I present you with a solution. Cranberry raisin bran muffins... made from yes you guessed it..... the raisin bran. I baked up a batch of these... and behold, they all got eaten. In fact not only did they all get eaten.. but I was met with open hands begging for another and another. So high five to me for figuring out a way to use up the once unwanted cereal..... because I hate wasting food, have I mentioned that before? I believe I have. Also... these muffins are mommy friendly too, as in friendly to your waistline. They have only 120 calories in each. A certain popular coffee chain who's name I won't mention... cough, cough, Starbucks, cough.... has a similar Cranberry Bran Muffin, and it has almost 500 calories in one!
Cranberry Raisin Bran Muffins
Ingredients
1 1/2 cups raisin bran cereal
1 cup low fat buttermilk
1/4 cup unsweetened applesauce
2 tablespoons canola oil
2 tablespoons molasses
1/2 cup splenda granulated sweetner
1 teaspoon vanilla extract
1 large egg
1 cup all purpose flour
1/12 teaspoons baking soda
1 teaspoon baking powder
1/3 cup dried cranberries
Directions
Preheat the oven to 350 degrees. Lightly spray 12 muffin cups with nonstick baking spray.
In a medium bowl, whisk together the first 8 ingredients (raisin bran through egg) set aside.
In a large bowl, combine the flour, baking soda, baking powder and cranberries and stir. Create a well in the center and add the raisin bran mixtures. Using a large spoon or spatula, stir just until the dry ingrediens are moistened.
Spoon the batter evenly into prepared muffin tins filling each cup 2/3 of the way full.
Bake for 15 to 18 minutes or until the center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack to cool.

Friday With The Byrds......
Having a lovely little Friday..... I hope all of you are too. After picking up the girlie byrds from school, the mama went to have the car washed. While the car was being washed..... we went and had a bite to eat at Valencia Hot Dog Co. The little byrds had hot dogs while the mama had the veggie sandwich..... yum.
Next the mama had a suprise for the kiddos. The girlie byrds love to watch Food Networks Cupcake Wars. Have you ever watched? Well one of our local bakeries..... Bake You Happy competed a while back and won! So the mama took the kiddos to each pick any cupcake they wanted......
Haylei chose a red velvet cupcake, Sumarah chose a chocolate cupcake with mint frosting... and the mama and baby byrd split the rhubarb cupcake, which was a vanilla bean cupcake with a graham cracker bottom, rhubarb cream filled center and strawberry frosting on top.... basically it was heaven.
Finally...... we stopped on the way home to pick up a few movies to watch. The girlies chose the first Harry Potter.... we just started the book series, so they were anxious to watch this one. Now the baby byrd is down for the night... and the girlie byrds are enjoying there movie with a nest of blankets, pillows and snacks.

Taking a moment.........
Just a little note before I nod off in bed....... I have the best job in the world. I am the mama to these three beautiful little byrdies. Though chaotic at times....... they make life so sweet. Take a moment amid all the busy hustle and bustle and give your kiddos two extra kisses tomorrow...... I know I will.

Age Old Comfort Food.... Meatloaf
Ah..... meatloaf. Love it or hate it? I happen to hate every meatloaf I have ever tried... except mine. Funny thing about this age old comfort food..... this was a staple for dinners in the 1950's. In fact it stayed that way well through the 70's before falling out of favor (probably had something do with those darn leg warmers and work out wear everyone was running around in in the 80's). No seriously jokes aside. My eight year old begged me for over a week to make meatloaf. I don't know what took me a week..... it's so easy and quick. It being filling and cheap doesn't hurt either. Another plus is you probably have all the ingredients in your kitchen right now. This recipe is a mix from my mother in laws recipe that my husband grew up on and my own twist. We always have it with mashed potatoes and green beans, isn't that written somewhere in stone? That you have to have green beans and mashed potatoes with meatloaf? No? Huh coulda sworn it was.....
Nancy's Meatloaf with A Twist of Sarah
Ingredients
1 pound of lean ground beef
1 cup of crushed saltine crackers
1 small onion chopped
1 egg beaten
1 8oz can of tomato sauce
1 tsp. onion powder
1 tsp. Worcestershire sauce
1 tbsp. garlic salt
salt and pepper
dried parsley
ketchup
Directions
Preheat oven to 350 Degrees.
In a large bowl using your hands.... mix ground beef with cracker crumbs, egg and onion.
Next add the onion powder, Worcestershire, and garlic salt. Mix well with hands.
Sprinkle with salt and pepper ( how much is totally up to your preference) and parsley (again your preference as to how much). Add a small amount of Ketchup to the mix... about 1/4 a cup.
Add tomato sauce to the mixture a little at a time mixing up with your hands as you do this. Now if you feel like it has a good consistency and you haven't' used the whole can than that is fine. I just do it until it feels right. It should be clumpy together.. but moist not dry.
Place in a standard loaf pan. Press down until it is flattened and even in the pan (but do not smash it too much) just enough until the pan is filled. Brush the top with a good layer of ketchup.
Bake in the oven for 45 min. Serve with mashed potatoes and green beans. Keep the ketchup handy for additional dipping... as the byrd family does!
