Avacado Tuna Sandwich......

This sandwich is so yummy and fresh!  I meant to make it for lunch this last weekend.... but decided it sounded good for dinner tonight.  Do you ever have lunch for dinner?  Or how about breakfast?  Every Thursday night at my house it's breakfast for dinner.  The kiddos love it..... although I may have to switch it up every now and then with a lunch item!

Ingredients
2 ripe avocados, peeled, pitted and coarsely mashed 2 Tablespoons fresh squeezed lime juice or lemon juice 1/4 cup roasted red pepper strips, fresh or jarred 2 Tablespoons chopped fresh parsley 1/2 teaspoon garlic salt 1/4 teaspoon black pepper 1 (5-oz.) drained can tuna 8 slices hearty multi-grain bread 8 slices tomato slices salt to taste 8 slices red onions
Directions
  1. In medium bowl, combine avocado, lime juice, red pepper strips, parsley, garlic salt and pepper.
  2. Gently flake and fold in tuna.
  3. Fill each sandwich with 2 slices tomato, 1/4 avocado filling and 2 slices red onion.
  4. Serve immediately.
